翠雀花素

翠雀花素飛燕草素花翠素花青素一種,植物色素來,亦係抗氧化劑[1]。 佢畀翠雀屬堇菜屬啲花藍色。又畀葡萄品種赤霞珠藍紅色。可以喺蔓越莓狐葡萄石榴[2]歐洲越橘入面搵到[3]

佢英文delphinidindelphinidine[4][5],直譯意思海豚,但同海豚無關,而係翠雀花喺西洋叫海豚咁解[6][7]

同其他花青素一樣,酸鹼度敏感,做得酸鹼度試劑鹼性溶液變藍,酸性溶液變紅。
