墨西哥蠑螈(學名:Ambystoma mexicanum) 係水棲火蜥蜴,原產地墨西哥,西班牙文嘅寫法係ajolote。
佢嘅外表同佢嘅幼體性熟好出名,亦即係話,就算佢喺性成熟之後亦都唔會經曆適應陸地嘅變態,仲係保持住佢嘅水棲糼體型態。

完全成長嘅墨西哥蠑螈,大概需要18至24個月。體長150毫米至450毫米(6至18英寸),正常嘅體長係230毫米(9英寸),體長長過300毫米(12英寸)係好少有嘅。佢哋有獨特嘅類似蕨類植物嘅唔封閉腮結構(同魚、蝌蚪嘅腮一樣)。通常由6條腮平均分布喺頭部兩側,每邊3條。腮一般係紅色,但已知會隨住食物嘅顏色改變。如果佢食紅色肉類,腮就會變成紅色。墨西哥蠑螈同樣會用皮膚呼吸,再將空氣轉入肺部。佢啲牙細到好難被察覺到,一般係用嚟夾住食物而唔係用嚟撕裂同咀嚼食物。佢哋有快速嘅身陳代謝,可以好快咁重新長出肢體或者器官。
墨西哥蠑螈同虎火蜥蜴(Ambystoma tigrinum)好似。顏色上,佢哋由白色(白化),灰色、茶色、咖啡色到黑色都有。野生嘅墨西哥蠑螈係好少有白色嘅,所有白化嘅墨西哥蠑螈(個身係白色,眼係黑色)都係從同一個單一變種雄性嚟嘅。喺1863年佢哋被運到巴黎植物園(Jardin des plantes))。白化變種喺實驗室同動物商店好普遍,係喺1950年代,透過同白化虎蠑螈雜交而得嚟嘅。而家,墨西哥蠑螈冇被大量咁捕捉,係因為咁樣做是被禁止嘅。
