豆腐

豆腐係起源自中國嘅一種古老傳統食品，響日本同韓國都好普遍，主要係用黃豆同石膏粉整，近年豆腐嘅製作已經冇用石膏粉，衹有部份地區例如香港嘅老店舖先會用番石膏粉，而家美加澳英等國已立法禁用石膏粉做豆腐。

豆腐根據唔同嘅製作方法或者唔同嘅份量，可以整成唔同嘅口感，例如硬豆腐、軟豆腐同寜波豆腐。

豆腐嘅英文、法文或西班牙文等西方社會叫法，都係跟足日本人嘅稱呼，叫做Tofu。

語源

英文嘅「豆腐」係嚟自日文tofu （豆腐）。日本豆腐，反過來，係借用中國豆腐（普通話： d ò uf ǔ ； tou4-fu ）「豆腐，豆發酵」。 ^[1]^[2]^[3]

英文入面最早記載「tofu」呢個詞，係喺1704年 Domingo Fernández Navarrete 本遊記《A Collection of Voyages and Travels》嘅譯本度，入面講咗豆腐係點整嘅^[4]。而「towfu」呢個寫法，亦喺1770年一位英國商人 James Flint 寫畀班傑明·富蘭克林嘅信入面見到。至於「bean curd(s)」呢個叫法，美國至少由1840年開始就已經一路有用開。 ^[5]^[6]
